Ahh good ol’ banana bread.
One of the rare foods that unquestionably qualifies as a breakfast option, snack or dessert.
The creation of this bread requires just five different ingredients. Yep, 5.
Ones you’re also very likely to already have stashed away in your cupboard.
Spice it up by adding a teaspoon of vanilla extract and 2 teaspoons of cinnamon powder. Play around with the flavour.
Besides this recipe being surprisingly simple, it’s also surprisingly healthy.
No added oil. No added sugar.
Blend, pour, bake and devour.
Healthy 5 Ingredient Banana Bread Loaf.
Ingredients:
3 large, very ripe bananas (mashed)
2 cups quick oats
1.5 tsp baking powder
2 eggs, room temperature
1/4 cup maple syrup
Method:
Step 1. Preheat oven to 170 degrees celcius. Lightly grease loaf pan with non-stick cooking spray and set aside.
Step 2. Add eggs, banana and maple syrup to a blender and blend until well combined.
Step 3. Add oats and baking powder, pulsing until smooth.
Step 4. Pour mixture into prepared loaf tin. Garnish with desired toppings.
Step 5. Bake for 30-35 minutes or until a skewer can be inserted in the centre and removed cleanly.
Step 6. Let loaf cool in pan before removing. Store in the refigerator in an airtight container.
Tips:
- Slivered almonds, chia seeds and sliced banana make great topping additions. Sprinkle on top just before baking.
- The riper your bananas, the more natural sweetness added to the bread.
- Honey makes a great maple syrup substitute. If you’re trying to reduce your sugar intake further, flavoured sugar-free maple syrup also works perfectly.
