Pancakes, maple syrup, scrambled eggs, bacon…..
Introducing the DIY breakfast board. Close relative of the mid-afternoon grazing board.
My younger sisters often request me to make this for brunch as they love to individually decorate their pancake plates pending their sweet or savoury cravings.
I will hint that you avoid cleaning up prior to eating. It’s almost certain you’ll be begged to turn the frypan back on and flip a few more.
DIY Pancake Breakfast Board.
Ingredients:
Healthy 4 ingredient pancakes
Crispy bacon
Scrambled eggs
Steamed asparagus
Frozen raspberries and blueberries
Nut butter (peanut/almond)
Chocolate chips
Slivered almonds and macadamias
Maple syrup
Method:
Step 1. Preheat oven to 180 degrees celsius. Place bacon on a roasting rack and bake for 20-25 minutes.
Step 2. Thaw frozen berries and set out the syrup, chocolate chips, nuts and nut butters.
Step 3. Prepare the pancakes.
Step 4. Once bacon is finished baking, turn the oven off. Store the cooked pancakes and bacon in the warm oven whilst scrambling the eggs and organising the board.
Step 5. Prepare scrambled eggs and steam asparagus.
Step 6. Arrange individual elements on the board. Serve warm.
Tips:
- Customising your breakfast board can easily be done by utilising various ingredients on-hand including fried eggs, garlic mushrooms, sliced banana, melted chocolate and strawberries.
- Baking the bacon on a roasting tray not only creates a delicious crisp but also reduces fat content by allowing oil to drip off.
- If you’re trying to limit spending, purchasing berries that are frozen acts as a great way to save money whilst not affecting quality.
